Olive Oil and Yogurt Bundt Cake

Recipes like this following-one are so handy to have; you can always adapt them to use seasonal fruit or what you have in your pantry/fridge. Or, simply flavour it with some vanilla or lemon zest. Delicious and stays long fresh...Oh, and not to many saturated fats.

Ingredients:
3 eggs
3/4 cup sugar (or 1/2 sugar,  1/2 stevia ) 
2 tsp vanilla (or zest of a lemon + 1/2 tbs juice)
3/4 cup yogurt (thick)
150 ml olive oil
1 1/2 cup SR flour
Fruit (strawberries, cherries, blueberries...) - optional
* Toppings- juice of 1/2 a lemon + some zest mixed with 2/3 cup icing sugar; or crushed berries + some sugar, quickly boiled/microwaved; or icing sugar. 
Method:
Preheat oven to 180*C, prepare bundt pan.
Beat eggs and sugar into thick, fluffy foam. Add yogurt, oil and flavourings, mix well. Switch mixer off, sift flour on top and fold in. Transfer mixture into pan. (If using fruit, place it in the middle). Bake for 35+ minutes, or until inserted toothpick comes out clean. Let it cool slightly, then turn it onto serving plate. Choose one of toppings and finish your bundt. 




Kuglof sa Jogurtom i Maslinovim Uljem

Recept mozete iskoristiti sa sezonskim bobicavim vocem ili sta vec imate u frizideru/zamrzivacu. Zamirisan vanilom ili limunovom koricom je takodje dobar. Ukusan, bez mnogo zasicenih masti i ostaje dugo svjez.

Potrebno:
3 jaja
3/4 solje secera (stavila sam 1/2 secera, 1/2 stevie)
2 k vanila ekstrakta (ili ribana korica limuna + 1/2 K soka)
3/4 solje cvrstog jogurta
150 ml maslinovog ulja
1 1/2 solja samodizajuceg brasna
Voce (jagode, tresnje, borovnice...) - opciono
* Prelivi- sok 1/2 limuna + malo ribane korice izmijesano sa 2/3 solje secera u prahu; ili zgnjecene bobice sa malo secera, na brzinu prokuhano; ili secer u prahu 
Nacin:
Zagrijte rernu na 180*C; pripremite kalup za kuglof.
Umutite jaja i secer u gustu pjenu, dodajte jogurt, ulje i arome. Iskljucite mikser pa prosijte brasno na povrsinu, zatim lagano rukom umijesajte. Uspite u kalup; ako koristite voce stavite ga u sredinu. Pecite oko 35+ minuta, ili dok ubodena cackalica ne izadje cista. Ostavite prohladiti, zatim preokrenite kuglof na tanjir za serviranje i ukrasite jednim od navedenih preliva.








Beef Bombay Curry

This recipe  is ideal for those who are not able to reach many Indian spices, but would love to try something from that country.

Ingredients:
1 kg beef (chuck), diced
1 tbs oil
2 onions, diced
2 garlic cloves, crushed
2 green chilies, sliced
1 tbs ginger, grated
1 1/2 tsp turmeric
1/2 tsp chilie powder (or more)
1 tsp cumin powder
1 tbs coriander powder
1 tsp salt
1 can tomatoes, diced
1 cup coconut milk
Method:
Heat oil, saute onion. Add garlic, chillies, ginger and meat. Cook until meat change colour. Add the rest of spices, then add canned tomatoes and coconut milk. Cover and cook for 1 1/2 - 2 hours, or until meat tender. Serve with rice or some Indian bread.


Bombaj Kari sa Govedinom

Recept je idealan za one koji zele probati Indijsku hranu, ali su u nemogucnosti pronaci mnoge (egzoticne) zacine koje ova kuhinja koristi. 

Potrebno:
1 kg govedine, sjecene na kockice
1 K ulja
2 crvena luka, sjeckana
 2cena bijelog luka, protisnutog
2 zelene papricice, sjeckane
1 K djumbira, rendanog
1 1/2 k kurkume u prahu
1/2 k ljute paprike u prahu- chili (ili vise)
1 k kima u prahu
1 K korijandera u prahu
1 k soli
1 konzerva sjeckanog paradajza
1 solja kokosovog mlijeka
Nacin:
Zagrijte ulje, proprzite luk. Dodajte bijeli luk, djumbir, papricice i meso. Dinstajte dok meso ne promijeni boju. Dodajte ostale zacine, zatim zalijte sa paradajzom i kokosovim mlijekom. Pokrijte i krckajte 1 1/2 - sata, ili dok meso ne omeksa. Servirajte sa rizom ili nekim .Indijskim hljebom 


No sugar, flour, eggs and dairy Biscuits (Apple Sauce, Banana and Oatmeal Biscuits)

These are beautiful, healthy biscuit suitable as gilt free treats, or even breakfast. Makes 14-15 biscuit.

Ingredients:
1 1/2 cup rolled oats
1/2 cup almond meal
1/3 cup dried cranberries, chopped
2 ripe bananas, mashed
1 cup apple sauce (unsweetened)*
1 tsp cinnamon

Method:
Preheat oven to 175*C; prepare a biscuit pan, cover with baking paper.
Grind 1 cup of oats, leave other 1/2 cup whole (or use oat as it is). Mix with cinnamon, cranberries and almond meal. Add mashed bananas and apple sauce; mix until all incorporated.  Take spoonfuls of this mixture and place it onto pan (I used ice-cream scoop). Press slightly the top of every biscuit with fork. Place in oven and bake for 20(+) minutes.
*If you can't buy apple sauce, cook 2-3 peeled and chopped apples until all moisture evaporates and apples become soft. Puree it into thick sauce (you'll need 1 cup)
.

Keksi sa Bananom, Jabukam i Zobenim pahuljicama (keksi bez jaja, maslaca, secera i brasna)

Divni su i veoma zdravi, a mogu posluziti kao dorucak ili poslastica bez-osjecaja-krivnje . Dobicete 14-15 keksica.

Potrebno:
1 1/2 solja zobenih pahuljica
1/2 solje mljevenog badema
1/3 solje susenih brusnica, isjeckanih
2 zrele banane, propasirane
1 solja sosa od jabuka (nezasladjen)*
1 k cimeta

Nacin:
Ukljucite rernu na 175*C; pripremite tepsiju za keksice, oblozite je neprijanjajucim papirom.
Sameljite 1 solju pahuljica (u mlinu za kafu, npr) drugu polovicu ostavite kakva jeste (ili mozete sve koristiti kako jeste - presovana zob). Pomijesajte sa bademovim brasnom, brusnicama i cimetom. Umijesajte pasirane banane i sos od jabuka. Izmijesajte dobro. Uzimajte po kasiku ove smjese (ja sam koristila hvataljku za sladoled)i smijestajte na papir. Svaki keksic malo pritisnite viljuskom, zatim smjestite u rernu i pecite 20(+) minuta.
*Ako nemozete kupiti gotov sos od jabuka - ogulite i narezite 2-3 jabuke, stavite u manju serpicu i dinstajte dok tecnost ne ispari, a jabuke postanu mekane. Ispasirajte; treba da dobijete 1 solju sosa.

Hungarian Goulash Slovenian Way

I befriended many people that I met through blogging. One of them is Sonja from Slovenia. She is a very creative and talented card maker and blogger. Her blog is called 'Na obisku pri Oldpunci'.
Sonja sent to me a book of recipes from a part of Slovenia that is very close to Hungary, so recipes are mixture of Slovenian and Hungarian influence in cooking. I've tried a few recipes from that book, and I'm glad I can share it with you.

Ingredients:
3 tbs oil
750 g onion, diced
2 carrots, diced
50 g smoked bacon, diced
750 g beef, diced into 4 cm cubes
1 green capsicum, diced
5 chillies, sliced
2 garlic cloves, crushed
2 tbs paprika powder
1/4 tsp cumin powder
500 ml water
0,5 kg potatoes, diced into  2,5 cm cubes
2 tomatoes, diced
1 tsp salt
1/2 tsp black pepper

Method:
Heat oil in a pot, add onion and bacon. Sautee until onion become transparent. Add other vegetables (except potato) and meat. Cook, stirring, until meat change colour. Add spices and water; season with salt and pepper. Cover and cook for 1 hour, or until meat almost done. Add potatoes, cover and cook for another 20 minutes, or until meat and potatoes become soft. Serve with crusty bread.



Madjarski Gulaš na Slovenački način

Kroz blogiranje sam upoznala mnoge i sprijateljila se s nekima. Jedna od dragih prijateljica mi je Sonja iz Slovenije. Ona je veoma talentovana i kreativna u izradi cestitki i blogiranju. Njen blog se zove 'Na obisku pri Oldpunci'.
Sonja mi je nedavno poslala knjigu recepata iz dijela Slovenije koji se granici sa Madjarskom, tako da je interesantno vidjeti mjesavinu uticaja ove dvije zemlje  na pripremu hrane. Isprobala sam nekoliko recepata, koje cu rado podijeliti s vama.

Potrebno:
3 K ulja
750 gr crvenog luka, sjeckanog
50 gr mesnate dimljene slanine, sjeckane
750 gr govedine, sjecene na 4 cm kockice
2 mrkve, sjeckane
1 zelena paprika, isjecena na kockice
5 feferonki, isjecene
2 cena bijelog luka, isjeckan
2 K crvene paprike, prah
1/4 k kima u prahu
500 ml vode
0,5 kg krompira, sjecen na 2,5 cm kocke
2 paradajza, sjecen na kockice
1 k soli
1/2 k crnog bibera

Nacin:
Zagrijte ulje, proprzite luk i slaninu, zatim dodajte ostalo povce (osim krompira) i meso. Dinstajte dok meso ne promijeni boju. Ubacite zacine i vodu, poklopite i kuhajteoko 1 sat ili dok meso skoro ne bude gotovo. Ubacite krompir pa kuhajte jos dodatnih 20 minuta, ili dok meso i krompir ne budu sasvim meki. Sluzite sa nekim dobrim kruhom / hljebom.







Grilled Spiced Fish (Flounder)

Ingredients:
2 large or 4 small flounder, cleaned
2/3 cup yogurt
2 garlic cloves, crushed
1 tsp ground coriander seeds
1/2 tsp chilli powder
1 tsp garam masala
1 tbs lemon juice (or vinegar)
1 tbs oil
salt

Method:
Make a few slashes on both side of fish. Mix remaining ingredients adding salt to taste. Divide and spoon over each side of each fish. Let it stand for 1 hour+. Cook under grill, or in hot oven, turning once and collecting and spooning loose juices. Serve with lemon slices.



Pečeni Pikantni Iverak  (Pasara / Ploča / Iver)

Potrebno:
2 veca ili 4 manja iverka, ocisceni
2/3 solje jogurta
2 cena bijelog luks, protisnuti
1 k sjemena korijandera u prahu
1/2 k chili praha / ljute paprike
1 k garam masale
1 K soka limuna (ili sirce)
1 K ulja
so

Nacin:
Zarezite ociscenu ribu nekoliko puta na obje strane. Pomijesajte ostale sastojke,dodajuci so prema ukusu, pa njima namazite ribu sa svih strana. Ostavite oko 1 sat + u marinadi.
Pecite ispod grila ili u vreloj rerni, okrecuci jednom. Skupite i vratite sokove na povrsinu ribe prilikom okretanja. Servirajte sa kriskama limuna.



Joconde Cake with Hazelnuts

There are moments in our lives when we crave something different...Not necessarily better, just different. 

Ingredients:
Decor paste-
50 g egg whites
50 g sugar
50 g butter, softened
50 g flour + colour (or 15 g cocoa + 43 g flour)
Sponge-
3 eggs (150 g)
3 egg whites (90g)
75 g icing sugar
85 g almond meal
25 g flour
2 1/2 teas caster sugar
30 g butter, melted
Mousse-
300 g (dark) chocolate
300 ml cream
3 eggs
1/2 cup icing sugar
Hazelnut meringue -
2 egg whites
100 gr hazelnuts, roasted and processed / grated  (skin removed)
1/4 cup sugar
Cream for decoration- whipped with 1 tbs of icing sugar
Method:
Decor paste-
Mix butter and sugar until pale and fluffy, add egg whites (one by one). Mix in flour and cocoa by hand.
Use bakers comb or strong plastic bag to make decorative patterns on silicon mat. Put it in freezer. Rest of this paste spread on a bottom of a cake pan (over baking paper) that you're going to use  and bake for 6-7 minutes. That's going to be bottom of your cake.
Sponge-
Mix egg whites with caster sugar; set aside. In another bowl, mix eggs, sugar and butter; add flour and almond meal. Put 1/3 of egg white mixture and fold by hand; repeat with other 2/3.
Cover decor paste from freezer with this sponge.
Bake 5-6 min at 200* C, or until edges start browning. Take out and cool.
Cut sponge into desired sizes and shapes, in this case you need 2 long strips, that are going to be inside a cake pan (like a ring). 
Hazelnut meringue-
Beat egg whites, add sugar and beat until thick and sugar melted. Spoon hazelnut meal and fold in. Place in baking tin (lined with baking paper) and bake for 30 minutes at 160*C.
Mousse-
Heat cream until very hot (don't boil), add chocolate and mix until melted. Let it cool.
Beat eggs and sugar until thick and pale. Add cooled chocolate mixture and mix really well.
Assemble-
Dark circle comes on bottom of a cake pan, around comes decorated sponge. Pour 1/3 chocolate mousse over the bottom, place hazelnut meringue, then pour other 2/3 of chocolate mousse. Decorate with whipped cream and refrigerate for 2 hours before slicing.



Ponekad pristignu oni trenutci u nasim zivotima, kada zelimo nesto drugacije...ne neophodno i bolje, samo drugacije.

Mona Liza  Torta sa Ljesnicima

Potrebno:
Dekorativna masa-
50 gr bjelanaca
50 gr secera
50 gr maslaca, omeksalog
50 gr brasna + boja (ili 15 gr kakaa + 43 gr brasna)
Biskvit-
3 jaja (150 gr)
3 bjelanca (90 gr)
75 gr secera u prahu
85 gr mljevenog badema
25 gr brasna
2 1/2 k sitnog secera
30 gr maslaca, otopljenog
Cokoladni mus-
300 gr chocolade, otopljene
300 ml slatkog vrhnja
3 jaja
1/2 solje secera u prahu
Beze kora sa ljesnicima-
2 bjelanca
1/4 solje secera
100 g ljesnika, ispecenih, oljustenih i samljevenih
Slatko vrhnje- za dekoraciju (umuceno sa 1 K secera u prahu)

Nacin:
Dekorativna masa-
Miksajte maslac i secer , dodajte jedno po jedno bjelance, zatim brasno i kakao.
Napravite dekorativne sare na silikonu, uz pomoc spatule, poslasticarskog 'ceslja' ili kese sa odsjecenim vrhom. Stavite silikon u zamrzivac. Ostatak tamne mase stavite na papir, velicine kalupa i ispecite 5-6 minuta. To ce vam biti dno.
Biskvit-
Miksajte bjelanca sa sitnim secerom, dok ne postane cvrsto. U drugoj posudi miksajte jaja sa secerom i maslacem; dodajte brasno i bademe. Ubacite 1/3 snijega bjelanaca, promijesjte rukom pa ubacite i ostale bjelance. Dobro promijesajte.
Ova masa ide preko dekorativne mase. Pecite 5-6 min na 200*C, ili dok krajevi ne pocnu rumeniti. Izvadite i ohladite.
Isjecite zeljenu velicinu, stavite u kalupe (za tortu ili napravite druge oblike od jace plastike).
Beze kora sa ljesnicima-
Umutite bjelanca. dodajte secer i mutite dok ne postane gusto i sjajno. Ubacite ljesnike, pa rucno umijesajte. Pecite (u kalupu sa papirom) na 160*c oko 30 minuta. Ohladite.
Aranziranje-
Na dno kalupa dolazi tamna kora, okolo izrezane trake od dekorativnog biskvita. Uspite 1/3 cokoldanog musa, stavite koru od bjelanaca i ljesnika preko, zatim uspite ostatak cokoladnog musa. Umutite pavlaku i ukrasite. Rashladite  najmanje 2 sata prije rezanja.



Ricotta and Walnuts Sauce

I always have ricotta either in the fridge or in my freezer. With ricotta you can be creative and use it in many ways. This recipe comes from an Italian cookbook (Silver Spoon); use it for pasta or canapes.

Ingredients:
250 g Ricotta cheese
4 tbs mascarpone cheese
2 tbs milk
1 egg yolk
5-6 walnuts, chopped
1-2 tbs fresh chives, chopped
salt and pepper
Method:
Place ricotta in a bowl, add milk and mascaropne. Season to taste, add yolk and mix well. Add half of walnuts and chives, mix again. Other half leave for sprinkling over the sauce.



Sos (namaz) sa Rikotom i Orasima

Uvijek imam rikotu u frizideru (ili zamrzivacu), jer se svasta moze napraviti sa njom. Recept, koji danas predstavljam, dolazi iz Italijanske knjige recepata ' Srebrna kasika'. Mozete ga iskoristiti kao sos za pastu, ili kao namaz.

Potrebno:
250 gr rikote
4 K maskarpone sira
2 K mlijeka
1 zumance
5-6 oraha, sjeckanih
1-2 K vlasca, sjeckanog
so i biber
Nacin:
Stavite rikotu u posudu, dodajte mlijeko i maskarpone. Zacinite prema ukusu, dodajte zumance i promijesajte.Dodajte polovicu oraha i vlasca, promijesajte. Preostalu polovicu stavite po povrsini namaza.

Buckwheat 'Burek'

It's not photogenic, but it is very tasty. Recipe is found in an old Bosnian cookbook. What intrigued me is the way it's made. The dough / pastry is not stretched in traditional way, as I expected. It is poured in layers, as pancakes; which means anyone can make it.

Ingredients:
2 1/2 cups buckwheat flour (+,-)
salt and water (for pancake batter consistency)
Filling-
250-400 g mince
1 onion, chopped
salt and pepper
1-2 tbs oil
Method:
Prehat oven to 200*C, prepare a baking pan (with 2,5 cm high edge -like pizza pan. Mine was 32 cm diameter).Oil it.
Mix buckwheat flour, salt and water into a batter.
Heat oil in a pan. Sautee onion. Take off heat, mix in mince; season to taste. Place empty pan in oven When hot, pour 1/3 of batter on bottom. Bake a few minutes; sprinkle 1/2 of meat mixture. Bake a few minutes again. Repeat with the rest of prepared ingredients, making sure last layer is buckwheat. That means you'll have 3 layers of buckwheat and 2 layers of mince (every layer is baked around 5  minutes ) Take out, spread some butter on top and serve.

             


Burek od Heljde

Fotogenican nije, ali ukusan jeste. Recept je iz knjige Bosanski Kuhar. Sta me je zaintrigiralo je 
nacin pripreme. Kore se ne razvlace, kao sto bi to ocekivali kod naziva burek, vec se 'razlijevaju'        kao tijesto za palacinke. Znaci, ovaj burek moze svako napraviti!
Dobar vikend svima!

Sastojci
2 1/2 solje heljdinog brasna (+,-)
so i voda (da se napravi tecno tijesto kao za deblje palacinke)
Fil-
250-400 gr mljevenog mesa
1 crveni luk, cjeckan
so i biber
1-2 K ulja
Nacin:
Ukljucite rernu na 200*C; pripremite tepsiju (moja je bila 32 cm dijametra i sa 2,5 cm visine), nauljite ju.
Pomijesajte heljdino brasno sa vodom i solju.
Zagrijte ulje u tavi, proprzite luk. Smaknite, pa dodajte meso i zacinite. 
Stavite praznu tepsiju u rernu; kada se zagrijala, ulijte 1/3 tijesta. Zapecite, zatim pobacajte 1/2 mjesavine sa mesom. Zapecite ponovo. Ponovite ovo sa preostalim dijelovima; znaci, treba da imate 3 sloja heljdinog tijesta i 2 sloja mesa (u sredini). Svaki sloj se pece oko 5 minuta. Izvadite, premazite sa maslacem i sluzite








Mushroom and Zucchini (crustless) Pie

Quick meatless meal for Monday; tasty, filling and low calorie!

Ingredients:
2 eggs
250-350 g mushrooms, sliced
2 tbs sour cream
1 garlic clove, crushed (or garlic powder)
2 zucchinis, grated
1/3 cup flour
salt and pepper
oil (or butter) and flour for the dish
Method:
Preheat oven to 180*C; grease a (20 cm) dish and coat with flour.
Heat a non-stick pan and sautee mushrooms with 2 tbs sour cream, garlic, salt and pepper. 
Beat eggs in another bowl, add mushrooms, zucchinis, flour and seasoning. Mix well and place into prepared dish. Bake for 20-25 minutes. Serve with yogurt or sour cream (optional). 


Pita sa Gljivama i Tikvicama (bez podloge)

Jedan brzi obrok za 'bezmesni ponedjeljak'. Ukusan, zadovoljavajuci i nisko kalorican.

Potrebno:
2 jaja
250-300 gr sampinjona (ili sl.)
2 K kisele pavlake
1 ceno bijelog luka, protisnut
2 tikvice, rendane
1/3 solje brasna
so i biber
ulje (ili maslac) i malo brasna za posudu 
Nacin:
Ukljucite rernu na 180*C; pripremite (20 cm) posudu. Nauljite je i pospite brasnom.
Izdinstajte gljive sa kiselim vrhnjem, bijelim lukom i zacinite.
Umutitejaja u drugoj posudi, dodajte gljive, tikvice, brasno i zacinite. Uspite u posudu i pecite 20-25 minuta. Servirajte sa jogurtom ili kiselim vrhnjem (opciono).





Olaf - 'Frozen' Cake

Special Birthday cake made for a special girl!

Fondant-
200 g marshmallows
2 cups + icing sugar
2 tbs water
vanilla 
coconut oil or other shortening for greasing
Place marshmallows and water in a microwave safe bowl. Heat on high for 1.30-2 minutes, taking out and stirring every 30 seconds, until melted. Mix in 1/2 of sugar, other 1/2 sift on working surface. Pour melted mixture over it, grease your hands well and start kneading. It's VERY sticky, grease hands all the time adding sugar until fondant becomes pliable and non-sticky. You can do this a week in advance, then leave fondant in a container in cool place. Bring to room temperature before rolling out. To colour fondant: add a bit of gel colours and knead in. If using liquid colours, you will need to add  more icing sugar or corn flour.
Moist Vanilla cake-
2 1/2 cups flour
1 1/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 3/4 cup sugar
3 /4 cup butter, melted
1 cup buttermilk
3 tbs vegetable oil
2 tsp vanilla essence
6 large yolks
3 egg whites 
Beat egg whites with 3/4 cup sugar until stiff. Set aside 
In another bowl beat the rest of sugar and yolks. Add all wet ingredients, slowly beating all the time. Sift all dry ingredients on top and fold in. Add 1/3 egg whites, mixing with a spoon/ spatula, then fold in the rest. Divide and bake in 2 spring forms (30+ minutes, 180 *C). Take out, cool, then level the tops and split each into 2.
Italian Meringue Butter Cream-
2 cups sugar
6 tbs water
3/4 cup egg whites
500 g butter, cubes, softened
1 tsp vanilla essence
blue food colour 
Place sugar and water in a heavy bottomed pan. Bring to boil, turn heat down and boil for 5-7 minutes, or until syrup reaches 120*C (or 'firm ball stage' - when some syrup dropped in a glass of cold water becomes hard.) 
While waiting for syrup to become thick, start beating egg whites (clean bowl). When syrup ready, carefully start pouring hot liquid into egg white meringue while mixer runs (not on a side of bowl, or on beaters). Continue beating until side of bowl not warm to touch anymore (might take 6-8 minutes). Now pour in vanilla and start adding 2 by 2 cubes of butter, until all incorporated and smooth. 
Blue ice-
1 cup sugar
1/2 cup glucose syrup
1-2 drops of blue colour
Heat sugar, food colour and syrup in a heavy bottomed pan. Bring to boil and let it reach 120*C (or hard ball stage). Must not burn, or you'll loose colour. Pour on a double layer of al foil (in a pan) and let it cool. Crack into desirable sizes.

 Posebna Rodjendanska Torta za Posebnu Djevojcicu

Fondan-
200 gr marsmalou 
2 solje + secera u prahu
2 K vode
kokosovo ulje ili druga masnoca za ruke
1 k vanile
Stavite marsmalou i vodu u posudu, zagrijavajte na najjacem stupnju u mikrovalnoj 1.30-2 minute, mijesajuci svakih 30 sekundi. Kada se sasvim otopilo, izvadite umijesajte 1/2 secera u prahu. Drugu polovicu prosijte na radnu povrsinu. Istresite otopljenu masu na secer, namazite ruke dobro sa kokosovim uljem i pocnite mijesiti. JAKO je ljepljivo, stoga mazite ruke cesto, dodajuci secer sve dok ne postane zasiceno i uoblicljivo 'tijesto'. Ovo mozete uciniti cak 1 sedmicu prije; ostavite fondan u hermeticki zatvorenoj kutiji na hladnom mjestu. Prije razvlacenja i oblikovanja, vratite na teperaturu sobe. Da obojite fondan; umijesajte gel boje i umijesite. Ako koristite tecne boje, morate dodati secera u prahu ili skrobnog brasna.
Vlazni Vanila Biskvit-
2 1/2 solje brasna
1 1/4 k praska za pecivo
1/4 k sode bb
1/2 k soli
1 3/4 solje secera
3/4 solje maslaca, otopljenog
1 solja mlacenice
3 K ulja
2 k vanile
6 vecih zumanaca
3 bjelanca
Umutitebjelanca sa 3/4 solje secera. Ostavite po strani.
U drugoj posudi mutite zumanca sa secerom, pa dodajte ostale vlazne sastojke, muteci lagano. Prosijet brasno i ostale suhe sastojke na povrsinu i rucno umijesajte. Dodajte 1/3 snijega bjelanjaka; umijesajte, zatim polako umijesjte i preostali snijeg. Podijelite u 2 obruca i pecite 30+ minta. Ohladite i prerezite na pola svaki (ako treba poravnajte povrsinu prvo).
Italijanski 'Puter Krem sa Bjelancima'-
2 solje secera
6 K vode
3/4 solje bjelanaca
500 gr maslaca, omeksalog, isjecenog na kocke
1 k vanile
Plava prehrambena boja
Stavite secer i vodu u lonce sa teskom dnom. Zagrijte do vrenja, smanjite i kuhajte oko 5-7 minuta, ili dok sirup ne dostigne temperaturu od 120*C. (Taj stadij se zove 'tvrda lopta' - ako ubacite malo sirupa u hladnu vodu, stvrdnuce se).
U meduvrmenu dok cekate da se sirup zgusne, pocnite mutiti bjelanca (u cistoj posudi). Kada je sirup postigao zeljeno stanje, uspite ga (PAZLJIVO) na bjelanca (ne na stranu posude i ne na zice). Nastavite mutiti dok se posuda ne ohladi (6-8 minta). Uspite vanilu, zatim pocnite dodavati 2 po 2 kocke maslaca. Mutite sve dok ne postane glatko i ujednaceno.
Plavi Led-
1 solja secera
1/2 solje glukoza sirupa
1-2 kapi plave prehrambene boje
Stavite secer, boju i glukozu u posudu sa teskim dnom. Zagrijavajte dok sirup ne postigne 120*C (opet ona tvrda loptica). Ne smije zagoriti, jer ce izgubiti boju. Stoga odmah istresite preko duplog sloj a al folije koji ste postavili preko tepsije. ostavite da se stegne, zatim iskidajte u zeljene oblike.




Brodet (Dalmatian Seafood stew)

It's cold today in my town. Snow has fallen about 30 km from us (Blue Mountains), which is unbelievably rare. Time for something warm and comforting. 

Ingredients:
2-3 tbs olive oil
1-2 onions, diced
4-6 garlic cloves, crushed
1/2 kg fish, suitable for cooking
1/2 kg seafood, mixed (Marinara mix OK)
2-3 tbs tomato puree
2 large tomatoes, diced
1 cup white wine (+fish stock or water)
1 bay leaf
salt and pepper, to taste
parsley leaves, for garnish
1-2 tbs wine vinegar
Method:
Heat oil in a pan, saute onion. Add seafood, garlic and seasoning. Mix then pour wine and add all other ingredients. Cook for 15 minutes. Serve with (risoni) pasta, crusty bread, mashed potato or rice.



Hladno je danas u mom gradu. Na 30 km od nas ( u Plavim planinama) je pao snijeg, sto je izuzetno rijetka pojava. Vrijeme je za nesto toplo i zadovoljavajuce.


Potrebno:
2-3 K ulja (maslinovo)
1-2 crveni luk
4-6 cena bijelog luka
1/2 kg ribe (morske, cvrste)
1/2 kg mijesanih morskih plodova
(kozice, kalamari, dagnje...)
2-3 K paradajz pirea
2 paradajza, izrezana
1 lovorov list
2,5 dl bijelog vina (+ riblji bujon ili voda)
so i biber
persunovo lisce
1-2 K vinsko sirce / ocat 
Nacin:
Zagrijte ulje, prodinstajte luk. Ubacite bijeli luk i morske plodove. Promijesajte, zatim ubacite zacine i ostale sastojke. Zalijte sa vinom i vodom i kuhajte oko 15 minuta. Servirajte sa (rizoni) pastom, pire krompirom, kruhom ili rizom.

Holand's Farmhouse Potato Bake

I don't have much time for posting and commenting, so excuse my absence for a few weeks. I'll let you know what I was doing, when everything is finished.

Ingredients:
1 kg potatoes, peeled and sliced into 8 mm slices
30 g butter
1 onion, chopped
250 g bacon, chopped
4 pieces celery, chopped
250-300 ml sour cream
pinch oregano
salt and pepper
1/2 cup grated cheese
paprika
Method:
Preheat oven to 180*C, oil/butter a baking dish.
Cook sliced potatoes in salted water for 8 minutes; drain. Heat butter, sautee onions, celery and bacon. Season sour cream with salt, pepper and oregano.
Arrange potato slices in layers with the onion mixture and seasoned sour cream; finish with sour cream. Sprinkle the top with cheese and paprika. Bake for 30-35 minutes.


Holandski Rusticni Zapeceni krompir

Nemam mnogo vremena za nove postove i komentiranje, stoga me izvinite u narednih nekoliko sedmica. Upoznacu vas kasnije sa mojim desavanjima, kad sve bude zavrseno.

Potrebno:
1 kg krompira, izrezan na 8 mm kolutice
30 gr maslaca
1 crveni luk, sjeckan
250 gr mesnate slanine, sjeckane
4 manja komada celera, sjeckan
250-300 ml kiselog vrhnja
malo origana
so i biber
1/2 solje rendanog sira
paprika u prahu
Nacin:
Ukljucite rernu na 180*C, nauljite (ili namastite) posudu u kojoj cete peci.
Kuhajte krompire u zasoljenoj vodi oko 8 minuta, osijedite.Zagrijte maslac, prprzite luk, celer i slaninu. Zacinite kiselo vrhnje i dodajte origano.
Poslazite pola krompira, pospite sa mjesavinom luka i slanine, zatim kiselim vrhnjem. Ponovite sa drugom polovicom. Pospite sir i malo paprike na vrh i pecite 30-35 minuta.

Custard and Pear Tart with Steusel Topping

Opening a food related business in Australia (NSW) is not easy. There are so many regulations and tests you and your kitchen have to pass, in order to have licence.
I had an idea of baking cakes from my home and offering them to cafes, restaurants and privately. That would be my dream job...
Currently, I'm in the middle of completing my FSS course (food safety supervisor), which is one of necessary  steps in order to get my licence. Then, someone from council will have to visit my kitchen and tell me if I need to make some changes, or it would be OK to use it as it is. After that comes business registering, insurance, marketing... I'll let you know about my progress!

Ingredients:
Pastry-
1 1/2 cup flour
3 tbs sugar
pinch of salt
125 g butter, cold in pieces
1 egg, beaten
1 tbs ice cold water 
Custard cream-
1 3/4 cup milk
1/4 cup cream
2 yolks
1/4 cup sugar
2 tbs corn flour / starch
2 tbs custard powder
+ 2-3 pears, ripe-ones please (canned, drained OK)
Crumble-
¼ cup firmly packed brown sugar
3 tbs flour
½ teaspoon cinnamon
1/3 cup rolled oats
50g cold butter, cubed
Method:
Make pastry by placing all ingredients into a food processor and blitzing until dough formed. Take out, wrap in cling wrap and let it rest. 
Heat 1 1/2 cup milk, sugar and cream into a non-stick pan. Mix 1/4 cup milk with the rest of ingredients (except pears). When milk starts boiling, pour mixture into it and cook until thick. Cover with cling film and let it cool. 
Peel and core pears; slice each into 4 or 6.
Preheat oven to 180*C, prepare a tart tin. Roll out your pastry and place into tin. Spoon custard cream, then place pears over it. 
Place all ingredients for crumble into a food processor and blitz until crumbs formed. Place them over pears. Bake for 35+ minutes, cool then serve.


Mrvičasti Tart sa Pudingom i Kruškama 

Otvoriti biznis vezan za hranu u Australiji nije nimalo lako. Postoji mnogo regulacija i testova koje vi i vasa kuhinja morate proci, da biste dobili dozvolu.
Moja ideja je da radim od kuce, pripremam deserte i slicno, po narudzbi kafea, restorana ili privatnih lica. To bi bio posao mojih snova...
U ovom trenutku sam u procesu zavrsavanja kursa koji je neophodan step da bih dobila dozvolu. Poslije toga, neko od odgovornih lica ce morati posjetiti moju kuhinju i reci mi mogu li je koristiti kakva jeste ili cu morati napraviti neke promjene. Zatim, dolazi registracija biznisa, osiguranje, marketiranje...Obavjestavacu vas o mojim 'koracima'!

Potrebno:
Prhka kora-
1 1/2 solja brasna
3 K secera
malo soli
125 gr maslaca, hladnog, rezanog
1 jaje, blago umuceno
1 K hladne vode
Puding krem-
1 3/4 solje mlijeka
1/4 solje slatke pavlake
2 zumanca
1/4 solje secera
2 K 'gustina' (ili sl.)
2 K puding praha vanille (1 puding?)
+ 2-3 kruske, zrele
Mrvicasta povrsina-
1/4 solje braon secera
3 K brasna
1/2 k cimeta
1/3 presane zobi
50 gr maslaca, komadici
Nacin:
Umijesite tijesto za prhku koru; prstima ili uz pomoc sjeckalice. Zamotajte u prozirnu foliju i ostavite odmarati.
Stavite 1 1/2 solju mlijeka, vrhnje i secer kuhati. U preostalu 1/4 solje mlijeka umijesajte preostale sastojke (izuzev kruski). Kada mlijeko provrije  uspite mjesavinu i mijesajte dok se ne zgusne. Pokrijte sa prozirnom folijom i ostavite hladiti.
Ogulite i narezite kruske; svaku na 6-8 komada.
Ukljucite rernu na 180*C; pripremite tart posudu.
Razvaljajte tijesto i smjestite ga u posudu. Ubacite puding krem, zatim utisnite kruske. 
Stavite sve sastojke za mrvicastu povrsinu u elektricnu sjeckalicu i izradite u mrvice. Zatim ovu masu prerucite preko kruski i zaravnajte. Pecite oko 35+ minuta. Prohladite i sluzite.


Raw Chocolate Cake

Between my tests and monitoring food temperature, I had to make something for kids who asked for anything sweet. I'm not raw food follower, but I'm not against it either...especially if it's quick, easy and delicious.

Ingredients:
1 1/2 cups of walnuts (or other nuts)
2-3 tbs coconut oil
2/3 cup pure cocoa powder
1/2 tsp salt
2 cups of soft pitted dates, chopped
1-2 tbsp pure honey (or agave syrup)
pinch of cardamom (or cinnamon), optional

Method:
Heat gently coconut oil and honey, stirring until melted. Add all other ingredients; mix really well. Line a small cake pan with foil; spoon mixture inside and refrigerate until firm. Slice and enjoy!


Prijesni Čokoladni Kolač

Izmedju testova i mjerenja temperatura hrane, nadjoh malo vremena da napravim djeci nesto slatko. 
Nisam pobornik 'raw' ishrane, ali nisan ni protivnik...posebno ako je priprema brza, lagana i ishod ukusan.

Potrebno:
1 1/2 solja oraha, komadi
2-3 K kokosovog ulja
2/3 solje kakaa, najbolje kvalitete
1/2 k soli
2 solje mekanih datula, sjeckane
1-2 K meda ili agavinog sirupa
prstohvat kardamoma ili cimeta, opciono

Nacin
Blago zagrijte kokosovo ulje i med; mijesajte dok se ne otopi. Ubacite sve ostale sastojke, dobro izmijesajte i postavite u manju cetvrtastu posudu oblozenu folijom. Stavite u frizider da se stegne, rezite i uzivajte.

Sweet Potato Cakes with Chives

I didn't think 2 weeks will pass without a single post. Well, I have completed my course (results will be known in a couple of days) and finally have some spare time to share a recipe with you.

Ingredients:

500 g sweet potatoes (kumara), unpeeled
1 egg, lightly beaten
1 1/4 cups breadcrumbs (dried)
2 tbs parsley, chopped
2 tbs chives, chopped
4 spring onions, thinly sliced
salt and pepper to taste
oil for shallow frying 
Greek yogurt or sour cream chopped chives for serving

Method:
Cook (or microwave) potatoes until soft. Cool slightly, peel and then mash.
Combine herbs, crumbs, egg, onions ans seasoning. Mix well with potatoes. Shape cakes and fry them a minute each side. Drain on paper towel, then serve with sour cream and sprinkled chives. 



Šnicle / Polpete od slatkog krompira i vlašca

 Nisam mislila da ce 2 sedmice proci bez i jednog objavljenog posta. Kurs sam konacno zavrsila (rezultati za par dana), i evo napokon nadjoh vremena da podijelim sa vama jedan recept.

Potrebno:
500 gr slatkog krompira, neoguljenog
1 jaje, umuceno blago
1 1/4 solje mrvica / prezle
2 K persunovog lisca, isjeckano
2 K  vlasca, isjeckanog
4 mlada luka, tanko isjecen
so i biber prema ukusu
ulje za plitko przenje
Grcki jogurt ili vrhnje / pavlaka + jos vlasca za servirati

Nacin:
Kuhajte slatki krompir dok ne omeksa, prohladite ga, ogulite i ispasirajte.
Pomijesajte mrvice, jaje, luk, zacinsko bilje sa krompirom; zacinite prema ukusu.
Zagrijte ulje i pzite svaku stranu oko 1 minut. Ocijedite na upijajucem papiru, zatim sluzite sa vrhnjem i jos malo isjecenog vlasca po povrsini.


Rice Pudding

This is one of simplest and most loved desserts in the World. I had it often during my childhood, but never tried to make it myself...until now!

Ingredients:
1 l milk (4 cups), full cream
1 cup short grain rice (Arborio), washed and drained
1/4 -1/2 cup sugar, depending how sweet do you like it
cinnamon for sprinkling
Method:
Place rice and milk in a heavy bottomed (non-stick) pan. Heat and bring to boil. Reduce and cook for 25+ minutes; stir time to time - this will assure creaminess of your dessert. Add sugar and mix well. Take off the heat and pour into serving dishes. Sprinkle with cinnamon and let it cool (refrigerate) before serving.
Tips:
If you want creamier pudding, add a bit of butter to milk (or you can use 1/4 cream instead of milk). You can also add other flavourings, like orange peel, cardamom, vanilla...



Sutlija

Jedan od najjednostavnijih i najvoljenijih deserta u svijetu. Cesto sam je imala tokom mog djetinjstva, ali nikad nisam sama probala napraviti... do sada!

Potrebno:
1 l mlijeka, punomasno
1 solja rize (250ml zapremina) kraceg zrna (Arborio), oprana i ocijedjena
1/4 - 1/2 solje secera
cimet za posuti
Nacin:
Stavite rizu i mlijeko u posudu sa tezim dnom (neprijanjajucu), zagrijte do kljucanja, smanjite i kuhajte 25+ minuta. Promijesajte cesto, jer ce to omoguciti kremastiju sutliju (i manje prijanjanja za dno). Uspite secer i dobro izmijesajte. Prebacite u posudu za serviranje i pospite cimetom. Rashladit dobro prije sluzenja.
Savjeti:
Ako zelite bogatiju, kremastiju sutliju, u mlijeko mozete dodati malo maslaca (ili 1/4 mlijeka zamijeniti sa slatkim vrhnjem). Razlicite arome se mogu dodati, npr korica narandze, kardamom, vanilla...

'Tulumbe' fried Syrupy Pastries

Tulumbe remind of churros by their shape, except they're dunk in syrup and the dough contains eggs (like profiteroles' dough). They are very popular in Turkey, Greece and Eastern Balkan countries.
I never made them before (don't really like that kind of desserts), but was keen to give it a try, since a cafe owner asked me if I could make them for him. (By the way, I have completed my course, and now I'm ready to start my business!)

Ingredients:
Pastry-
500 ml (2 cups water)
100 ml oil (or butter)
vanilla essence
375g flour
5-6 eggs (depending on size)
Syrup-
1 kg sugar (...I know!)
600 ml water
1/2 lemon, sliced
1 L oil for deep frying
Method:
First make syrup; place sugar, water and lemon slices in a pan. Bring to boil, cook for 5 minutes. Leave it to cool completely.
Pastry- Place water and oil in a (heavy bottomed) pan. Bring to boil, them place all flour at once into it and mix vigorously until very thick and starts to form a ball. Let it cool slightly, than mix in one by one egg. If your mixer (with spiral beaters) doesn't do it properly, you'll have to do it by hand. Mixture should be thick and sticky, but smooth.
Heat oil in a pan (180*C); spoon pastry mixture into a piping bag with 1 cm wide nozzle (or special device for tulumbe - I used Biscuit press). When oil hot, squeeze 5-6 cm of dough into oil (cutting with scissors that you've dipped in oil). Fry 4-5 at once, turning them a few times. When golden, take out on a paper towel, then place them in cold syrup. Turn them several times to 'drink' properly. Repeat with the rest of dough. Serve when completely cold.





Svi znamo sta su Tulumbe. Izgledom su slicne Ćurosima, ali tijesto je vise kao za princes krofne. Popularne su u Turskoj, Grckoj i istocnim zemljama Balkana
Nikada ih prije nisam pravila (ne volim deserte takve vrste), ali sam bila voljna isprobati, jer me je jedan vlasnik kafea pitao da li bih mogla da ih napravim za njega. (Usput da kazem, kurs sam zavrsila i sad mogu otpoceti svoj biznis!)

Potrebno:
Tijesto-
5 dl vode
1 dl ulja (ili maslaca)
375 gr brasna
vanila 
5-6 jaja (u ovisnosti o velicini)
Sirup-
1 kg secera (...znam!)
6 dl vode
1/2 isjecenog limuna

Nacin:
Najprije napravite sirup; stavite sve sastojke u serpu, zagrijte i kuhajte 5 minuta. Ostavite da se potpuno ohladi.
Tijesto- Stavite vodu i ulje da prokljucaju. Ubacite brasno i vigorozno mijesajte, dok se ne pocne odvajati od serpe. Tijesto treba da je jako gusto. Ostavite blago prohladiti, zatim umijesajte jedno po jedno jaje; ako mikser nece umutiti, onda koristite ruke ili drvenu kuhacu. 
Zagrijte ulje (180*C) na srednje jako. Stavite tijesto u presu (ja sam koristila presu za keksice) i istiskujte 5-6 cm dugacke tulumbe u vruce ulje (rezite makazama umocenim u ulje). Przite okrecuci, dok ne postanu zlatno zute. Izvadite na upijajuci papir, zatim ih smjestite u haldan sirup i okrecite da se  'napiju'. Ponovite postupak sa ostalima. Servirajte dobro rashladjeno.






Spaghetti with Baby Octopus and Olives

First attempt in preparing baby octopus!

Ingredients:
1 kg baby octopus, cleaned ( frozen baby octopus OK)
4 garlic cloves, minced / crushed
2-3 tbs extra-virgin olive oil
pinch of chili flakes
1/2 cup black olives, pitted (oil-cured are better)
salt and pepper
1/2 cup dry red wine
1 packet Spaghetti (or linguine) - 500 gr
2 tbsp chopped fresh parsley

Method:
Place octopus in a bowl, add a pinch of salt, 2 minced cloves of garlic and mix. Bring a pot of water to boil, place octopus in it, simmer for about 45 minutes ( or until the octopus feels tender when tested with a fork). Drain and set aside. When cool enough to handle, cut the octopus into smaller pieces.
Heat the olive oil in a pan. Add the remaining minced garlic and a pinch of red pepper flakes, and sauté for about 1 minute. Stir in the octopus and the olives; season with salt and pepper. Add the wine, and cook for 5 minutes, then cover and simmer for 10-15 minutes.       Cook Spaghetti (or linguine) according to instructions.  Drain the pasta, and add it to the pan. Add the parsley, and toss over heat for 30 seconds. Serve drizzled with high quality olive oil and a little more fresh parsley.


Špagete sa Hobotnicama i Maslinama

Prvi pokusaj pripreme malih hobotnica / sipa.


Potrebno:
1 kg malih sipa, ociscenih (moze i smrznute )
4 cena bijelog luka, sitno sjeckan / protisnut
2-3 K djevicanskog maslinovog ulja
prstohvat ljuspica ljute papricice / cilija
1/2 solje crnih maslina, bez kostice (u ulju su bolje)
so i biber
1/2 solje suhog crnog vina
1 pakovanje spageta (ili lingvina) - 500 gr
2 K sjeckanog persunovog lisca
Nacin:
Smjestite sipe u posudu, posolite, dodajte 2 cena protisnutog bijelog luka; promijesajte. Stavite lonac sa vodom da prokuha, ubacite sipe i kuhajte oko 45 min, ili dok sipe ne omeksaju. Ocijedite i ostavite po strani. Kad se malo ohladilo isjecite na manje komade.
Zagrijte ulje u tavi. Dodajte preostali bijeli luk i cili ljuspice; dinstajte 1 minutu. Ubacite sipe i masline, zacinite solju i biberom. Dodajte vino, kuhajte 5 minuta, poklopite i nastavite kuhati jos 10-15 minuta.
Skuhajte spagete prema uputsvu na paketu. Ocijedite i prebacite u tavu sa sipama. Pospite sa persunovim liscem, i mijesajte oko 30 sekundi. Servirajte poliveno maslinovim uljem i posuto sa jos persunovog lisca.



Black Risotto

No, it's not made with black rice; this is speciality of Dalmatia (coastal Croatia) where cuttlefish (or octopus or squid) ink is used to colour (and flavour) rice dishes. Best served with seafood!

Ingredients:
3-4 tbs olive oil
1 onion, diced
3-4 garlic cloves, crushed / grated 
1/2 red chilly (or more), diced
1 1/2 - 2 cups Arborio rice
6-7 cups fish or vegetable stock
1 tbs cuttlefish (or octopus) ink
150 ml white wine
1/2 cup Parmesan, grated 
salt and pepper (white preferable)

Method:
Wash rice and drain.
Heat fish stock and keep hot close by.
Heat oil in a pot, saute onion for 1 couple of minutes; add chilly and garlic. Stir well then add rice and ink. Mix until ink incorporated then add a ladle of fish stock; keep stirring all the time until stock absorbed, then add another ladle and continue until all stock used and rice cooked. Constant stirring is a must, as it gives creamy texture to your risotto. Finally add parmesan and white wine; check for taste and adjust it if necessary. Serve while warm.


Crni Rižot / Rizoto

Ne, nije u pitanju rizoto od crne rize; radi se o Dalmacijskom specijalitetu u kojemu se koristi mastilo / crnilo sipe ili hobotnice da oboji i oplemeni poznato jelo. Najbolje servirati sa drugim plodovima mora.

Potrebno:
3-4 K maslinovog ulja
1 crveni luk, sjeckan
3-4 cena bijelog luka, protisnutog
1/2 crvene papricice, sjeckane
1 1/2 - 2 solje rize za rizoto (arborio)
6-7 solja bujona od morskih plodova / ribe ili povrca
1 K crnila / mastila sipe ili hobotnice
150 ml bijelog vina
1/2 solje parmezana, rendanog
so i biber (bijeli po mogucnosti)

Nacin:
Operite rizu i ocijedite.
Zagrijte bujon / supu i drzite po strani.
Zagrijte ulje u serpi, prodinstajte luk nekoliko minuta zatim ubacite papricicu i bijeli luk. Promijesajte, uspite rizu i crnilo  i dobro umijesajte. Dodajte 1 solju supe i mijesajte dok riza ne apsorbira tecnost. Ponavljajte ovaj postupak dok ne utrosite sav bujon, a riza ne bude kuhana. Stalno mijesanje ce omoguciti kremastu strukturu rizota. Na kraju ubacite parmezan i bijelo vino, te provjerite okus. Servirajte dok je toplo.




Snjeza's Rosettes / Snježine Ružice

Recipe is from my friend's Snjeza blog 'Vrtaljica' .
Snjezana past away yesterday in her 62nd year of life, after her long battle with cancer.
RIP Snjezo!

Ingredients:
Dough / Pastry-
350 g flour
200 g butter, cold pieces
1 tbs sugar
100 ml milk, lukewarm
7 g yeast (2 tsp)
Filling-
220 g walnuts, processed
200 g sugar (or less)
50 gr chocolate, grated
3 egg whites
1 tbs rum (optional)

Method:
Place sugar, yeast, milk and 1 tbs flour in a bowl. mix and leave for yeast to activate.
Process flour and butter (or, do it with your finger tips); when yeast ready mix in butter/flour and make a soft dough. Let it rest for 30 min +.
Dust tea towel with flour and roll out a thin rectangle.
Process all ingredients for filling, then spread onto rectangle. Fold as a swiss roll,then cut into 1 cm discs. Place onto lined thins.
Switch oven to 180*C; when ready place swirls inside and bake for 15 minutes.
Take out, cool and dust with icing sugar.
